Let me just say! “Oh MY GOODNESS This WAS YUM-E!!! You might notice on the plate with cornbread I had a moment of hunger pangs and launched into Tortilla Chips with Plain Greek Yogurt. Snack Attack!
I found a recipe from http://eatsbyapril.com when I typed in what to make with hamburger and sweet potatoes. I found myself trying to come up with a simple but tasty meal quickly after my supper plans fell through and my husband would not be able to cook. He loves to be in the kitchen but had to work late.
April had a recipe called Hamburger Soup With Sweet Potatoes Easy Recipe. YaY! Although I did not follow this recipe completely, I did add my own ON HAND ingredients.
I cooked a large yellow onion in olive oil, then added two nice size garlic cloves and an orange pepper. In another skillet, I browned my ground chuck hamburger with a quick dash around of pink Himalayan salt and a touch of ground pepper, drained any fat. I scraped the onion and garlic in with the hamburger and put in two teaspoons of tomato paste, stirring it thoroughly. I had peeled and cut into small bite size chunks, my large sweet potato. Adding this with the ground chuck hamburger mixture and tomato paste, I placed a lid on my skillet and let it simmer until the sweet potato was soft. The aroma was heavenly and had me wanting to take a bite! This was when I had my snack attack 🙂
We had a nice pint size freezer bag of stewed roma tomatoes, juiced but with chunks of tomato. Adding this and six cups of beef broth *Please note in the photo I had drank most of the broth. I LOVE broth so you may not add as much to your meal, but I have to have more broth than meat and veggies thus why I called this Hamburger Veggie Stew/Soup!
In go those wonderful flavor packed tomatoes from our freezer. If you do not have them on hand, choose a can of diced tomatoes of your choice. Then I added two cans of creamed corn and two cans of cut green beans. Somehow, I still had the perfect amount of broth for leftovers for Me 🙂 In April’s recipe she uses 4 cups of beef broth one can of corn and one can of green beans. She also uses celery but I did not have any on hand.
1 Large Yellow Onion Chunked-You want to be able to find them in your stew/soup!
2 Nice Size Garlic Cloves Small Slices
1 Large Orange Pepper Chunked
1 Pound Ground Chuck Hamburger or Lean Hamburger or Turkey
Dash Around of Pink Himalayan Salt
Touch of Ground Pepper-I love pepper but it has begun to be a bit spicy for my mom
2 Teaspoons of Tomato Paste or to your liking
4 to 6 (or more) Cups of Beef Broth
1 Large Sweet Potato Peeled and Diced
1 Bag of Frozen Chunky Tomatoes or 28 Ounce Can Your Choice of Diced Tomatoes
1 to 2 Cans Cream Style Corn
1 to 2 Cans Cut Green Beans
